Bright, lemony, and absolutely zingy—Common Sorrel is the tangy hero of the wild food world. The young leaves pack a citrus punch perfect for soups, salads, pestos, and anything that needs a bit of botanical bite.

Ingredients:
- 1 handful Common Sorrel
- 1 handful fresh basil
- Olive oil (about 4 tbsp)
- 2 tbsp grated Parmesan
- 1 tbsp pine nuts or sunflower seeds
- 1 small garlic clove
- Salt & lemon to taste
Method:
- Blitz everything in a blender until smooth.
- Taste and adjust with extra lemon or salt.
- Store in a jar for up to a week.
Serving Tip: Use on pasta, swirl on soup, or spread on everything.
