(Dipsacus fullonum)
Spiky on the outside, soft-hearted on the inside. Use only the tiny purple florets, not the whole flower head (unless you like eating porcupines).

Ingredients:
• Sliced crusty bread
• Soft goat’s cheese
• Drizzle of Teasel flower honey
• A few Teasel florets
Method:
1. Toast bread lightly.
2. Spread cheese, drizzle with honey, sprinkle flowers.
3. Try not to eat all six in one sitting.
Serving Tip: Fancy enough for canapés. Easy enough for midnight snacks.
