Sautéed Black Medick Greens
🌿 Black Medick (Yellow Trefoil)
(Medicago lupulina)
Black Medick, also known as Yellow Trefoil, has small yellow flowers and clover-like leaves. Its young leaves can be cooked and eaten as a potherb.
Ingredients:
- 2 cups young Black Medick leaves
- 1 tbsp olive oil
- 1 garlic clove, minced
- Salt and pepper to taste
Method:
- Rinse the leaves thoroughly.
- Heat olive oil in a pan over medium heat.
- Add garlic and sauté until fragrant.
- Add the leaves and cook until wilted, about 3-5 minutes.
- Season with salt and pepper.
