Sautéed Black Medick Greens

🌿 Black Medick (Yellow Trefoil)

(Medicago lupulina)

Black Medick, also known as Yellow Trefoil, has small yellow flowers and clover-like leaves. Its young leaves can be cooked and eaten as a potherb.

Ingredients:

  • 2 cups young Black Medick leaves
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • Salt and pepper to taste

Method:

  1. Rinse the leaves thoroughly.
  2. Heat olive oil in a pan over medium heat.
  3. Add garlic and sauté until fragrant.
  4. Add the leaves and cook until wilted, about 3-5 minutes.
  5. Season with salt and pepper.
