Sautéed Black Medic Greens

 

🌿 Black Medic (Yellow Trefoil)


(Medicago lupulina)


Black Medic, also known as Yellow Trefoil, has small yellow flowers and clover-like leaves. Its young leaves can be cooked and eaten as a potherb.  


Ingredients:

2 cups young Black Medic leaves

1 tbsp olive oil

1 garlic clove, minced

Salt and pepper to taste


Method:

1. Rinse the leaves thoroughly.

2. Heat olive oil in a pan over medium heat.

3. Add garlic and sauté until fragrant.

4. Add the leaves and cook until wilted, about 3-5 minutes.

5. Season with salt and pepper.


Serving Tip: Serve as a side dish or mix into pasta for a nutritious boost.
