Cowslip Jelly with Flower Petals
🌼 Cowslip
(Primula veris)
Cowslip should only be consumed by adults.
Golden-yellow, honey-scented, and subtly sweet—Cowslip petals bring a charming countryside vibe to puddings, cordials, and wild-foraged fritters.

Method:
- Prepare a clear jelly base using apple juice or white grape juice, sugar, and gelatine according to packet instructions.
- Pour half of the jelly mixture into small moulds or glasses and allow to cool slightly—but not fully set.
- Gently place a few fresh, clean Cowslip petals into the semi-set jelly to suspend them mid-layer.
- Carefully pour in the remaining jelly mixture to fill the moulds, ensuring petals stay evenly dispersed.
- Chill in the fridge for at least 4 hours, or until fully set and beautifully translucent.
Serving Tip: Light-catching and floral—a dessert that blooms on your plate.
