Cowslip Jelly with Flower Petals

Method:
1. Prepare a clear jelly base using apple juice or white grape juice, sugar, and gelatine according to packet instructions.
2. Pour half of the jelly mixture into small moulds or glasses and allow to cool slightly—but not fully set.
3. Gently place a few fresh, clean Cowslip petals into the semi-set jelly to suspend them mid-layer.
4. Carefully pour in the remaining jelly mixture to fill the moulds, ensuring petals stay evenly dispersed.
5. Chill in the fridge for at least 4 hours, or until fully set and beautifully translucent.
Serving Tip: Light-catching and floral—a dessert that blooms on your plate.
