Teasel Flower Honey

(Dipsacus fullonum)


Spiky on the outside, soft-hearted on the inside. Use only the tiny purple florets, not the whole flower head (unless you like eating porcupines).

Ingredients:

• 1/2 cup Teasel florets

• 1 cup runny honey


Method:

1. Add florets to a clean jar.

2. Cover with honey and stir.

3. Leave to infuse for 1–2 weeks in a sunny window. Strain if you like, or leave rustic.


Serving Tip: Glorious on toast, in yoghurt, or stirred into tea. Also makes you look like a Victorian apothecary.
