Red Clover & Mint Ice Tea

 

🍀 Red Clover


(Trifolium pratense)

Sweet and floral with a hint of bean-like flavour, Red Clover blossoms are edible and beautiful. Scatter them fresh or infuse their subtle sweetness into syrups and teas.

 

Ingredients:

• 2 tbsp fresh Red Clover blossoms

• A few sprigs of mint

• 500ml boiling water

• Honey to taste

• Ice


Method:

1. Steep blossoms and mint in boiling water for 10 mins.

2. Strain, cool, and sweeten.

3. Serve over ice with extra mint sprigs.


Serving Tip: Pairs well with wildflower shortbread or just sunshine.
