Known across southern Europe as a prized forager’s find, Maiden’s Tears (Bladder Campion) offers spinachy leaves and soft white flowers that shine in savoury dishes—especially when olive oil, lemon, and cheese are involved.

Ingredients:
• 1 handful fresh Maiden’s Tears (Bladder Campion) leaves
• A few wild garlic leaves or 1 garlic clove
• Juice of ½ lemon
• 3–4 tbsp olive oil
• 2 tbsp grated Parmesan
• Salt and pepper to taste
Method:
1. Blend a handful of Maiden’s Tears (Bladder Campion) leaves with wild garlic (or a garlic clove), lemon juice, and olive oil.
2. Add grated parmesan and blitz again until smooth.
3. Season to taste and refrigerate in a sealed jar for up to a week.
Serving Tip: Toss through pasta, dollop on roasted veg, or spread on crusty bread.
