Ingredients:
• 2–3 eggs
• Small handful of tender Maiden’s Tears (Bladder Campion) leaves
• A few fresh Maiden’s Tears (Bladder Campion) flowers
• 1 tsp butter or olive oil
• Salt and pepper
Method:
1. Lightly sauté tender Maiden’s Tears (Bladder Campion) leaves in butter or oil until just wilted.
2. Beat eggs with salt and pepper and pour into a hot pan.
3. Add the wilted leaves and a handful of fresh Maiden’s Tears (Bladder Campion) flowers.
4. Cook until just set, then fold and serve warm.
