Lady's Bedstraw Infused Cheese

(Galium verum)
Lady’s Bedstraw is known for its tiny yellow flowers and subtle vanilla scent. Historically used in cheese-making, it adds a unique flavor to dairy products.
Ingredients:
• 2 liters fresh whole milk
• 1 handful fresh Lady’s Bedstraw flowers
• 1 tsp salt
Method:
1. Gently heat the milk in a saucepan until warm (not boiling).
2. Add the Lady’s Bedstraw flowers and simmer for 15 minutes.
3. Remove from heat and let it sit until curds form.
4. Strain through a cheesecloth into a bowl, allowing the whey to drain.
5. Once drained, season the curds with salt and shape into a round.
Serving Tip: Enjoy on crackers or fresh bread with a drizzle of honey.
