Cow Parsley Pesto
🌿 Cow Parsley
(Anthriscus sylvestris)
Cow Parsley is a delicate, feathery herb with a mild, parsley-like flavor. Its young leaves are edible and can be used in various culinary applications.
Ingredients:
• 1 handful young Cow Parsley leaves
• 2 cloves garlic
• 30g walnuts
• 30g Parmesan cheese
• 100ml olive oil
• Salt to taste
Method:
1. Wash and dry the Cow Parsley leaves.
2. In a food processor, blend the leaves, garlic, and walnuts until finely chopped.
3. Add the Parmesan and blend again.
4. Slowly drizzle in the olive oil while blending until a smooth paste forms.
5. Season with salt to taste.
Serving Tip: Toss through pasta, spread on toast, or drizzle over grilled vegetables.
