Birdsfoot Trefoil Blossom Syrup

(Lotus corniculatus)
A golden-yellow legume with a mild, grassy flavor, Birdsfoot Trefoil is traditionally used in herbal teas and as a forage plant. Its flowers can be used to create a calming infusion.
Ingredients:
• 1 cup water
• 1 cup granulated sugar
• 2 heaped tablespoons fresh Birdsfoot Trefoil flowers
• Zest of ½ lemon (optional for brightness)
Method:
1. In a saucepan, combine water and sugar. Heat gently until the sugar dissolves.
2. Add the Birdsfoot Trefoil flowers and lemon zest. Simmer for 2–3 minutes, then remove from heat.
3. Let it steep for 15–20 minutes.
4. Strain into a clean bottle or jar. Store in the fridge for up to 2 weeks.
Serving Tip: Add to lemonade, drizzle over pancakes, or shake into gin for a floral cocktail twist. A wild bar essential.
