(Stachys officinalis)
This minty-medicinal herb is perfect in herbal teas and syrups. Betony is less sweet, more grounding—ideal in savoury or herby settings.

Ingredients:
• 1 tsp dried Betony flowers
• 1 tsp dried lemon verbena or mint
• 300ml boiling water
• Honey to taste
Method:
1. Steep herbs in hot water for 5–7 minutes.
2. Strain and sip.
