Cornflower Petal Pancakes

Cornflower

(Centaurea cyanus)

Bright blue, peppery, and basically edible confetti. These petals are mild in flavour but mighty in looks. Use them like you use parsley—but prettier.

Ingredients:

  • Basic pancake batter (your fave recipe)
  • A handful of Cornflower petals
  • 1 tsp lemon zest
  • Maple syrup or honey to serve

Method:

  1. Fold petals and lemon zest into the batter.
  2. Cook pancakes as usual.
  3. Stack high, drizzle, and garnish with extra Cornflower petals.


Serving Tip: Great for brunch. Even better for smug Instagramming.
